High Protein Breakfast!

I know I know I know I always say that breakfast is the most important meal of the day.. well I mean it!!

Being a vegetarian my whole life, I’ve had to get creative in how I get a good amount of protein every day (due to my lack of meat.)

Obviously, I’ve done a great job so far… I’m 23 years old, in great shape and I’m still alive!

I love breakfast foods because there is so much room to get creative and sneakily get healthy nutrients into the foods we know and love. 

For an example: Pancakes!

I found this recipe for Protein Pancakes and have LOVED it ever since I made it the first time! What I love about it most is it is packed with protein yet doesn’t taste like you’re eating a mouth full of chalky protein powder. (No one likes to feel like they’re eating a vanilla flavored chalk board for breakfast.)

I made this on Sunday morning before church, so I added chocolate chips for a sweet little kick :)

Ingredients:

  • 1/4 cup egg whites
  • 1 scoop vanilla protein powder (organic brown rice protein or whey)- visit your local nutrition store or wholefoods
  • 2 tbs vanilla almond milk or skim
  • 1 tsp cinnamon
  • 1 tbs ground flaxseed

After above ingredients are mixed together add 1/2 banana (mashed)- mash first, then add!!

Add a handful of fresh or frozen fruit *or chocolate chips if you like a little sweetness on a Sunday :)

Pour into a pan that has been sprayed with olive oil cooking spray (a bit healthier than vegetable oil)~ heat on medium. Cook one side until you see the little bubbles.. just like cooking any pancake! Flip over (careful!) and cook on the other size until the middle is done (peek inside with a fork).

Top with two sliced strawberries, and enjoy every bite of your protein filled pancakes! 

Then to add another bit of protein, I made an omelette! It was packed with protein (in the eggs of course) and I added veggies and cheese (which had protein and calcium!)

Didn’t forget to take my daily Vitamins either which made it even THAT much healthier of a breakfast!

Get creative in the kitchen guys, there are millions of ways to have fun being a vegetarian.. or a vegan.. or just plain healthy. 

When you wake up tomorrow morning, instead of reaching for the box of Trix or sugary cereal, get creative and make something new and healthy.

Awe thank you very very much!!!

Oh gosh this is such a hard one, because lately I’ve been trying all kinds of new things that I LOVE and I eat like 12 times a day (you probably think I’m kidding but I literally eat VERY often. I space out little healthy snacks throughout my entire day.)

My top 3 would definitely be:

  1. Avocados (on anything and everything- chopped, sliced, mixed into salads, on my own light mozzarella cheese quesadillas, blended into avocado smoothies, mixed into pesto sauce… basically anything avocado related!)
  2. My delicious home made "Brittany salad creations!!" This may sound crazy, but salads are actually one of my FAVORITE foods in the entire universe. I love throwing things that I have together to create a unique salad that has TONS of nutrients and health benefits fluctuating from the various types of mix-ins. My favorite “Brittany Salad Creation” Has Avocado, some type of nut (walnut or almond typically) sprinkes of Flax Seed, 2 different types of fruit mixed in (such as raspberries and mandarin oranges) and balsamic vinaigrette dressing! Yum I think I’ll have one after I finish this!
  3. I really love pasta! It is not the heathiest food in the world, but I still love it. Since I love it so much, but am also trying to balance a healthy diet in general, I’ve spent serious time researching various ways to make pasta dishes more healthy! now rather than just throwing some spaghetti and butter together on a plate, I’ll remove the butter completely and add some delicious vegetables to some marinara sauce :) I used to have pasta as a main dish in a meal, but now I always have it as a small side plate  in addition to a bigger salad. 

A great thing to remember when you’re trying your best to eat healthy is to not eliminate the foods that you love just because you don’t think they’re good for you! You don’t want to punish your body for being healthy. Find ways to incorporate the foods that you love in a healthy way to your meals like I did with my love for pasta!

Such a fabulous chart.

I use tons of different fruits every month in my daily fruit smoothies and it is so important to remember which ones are in season when I plan my week ahead of time!

This got me that much more excited for summer, because summer is the time when my most favorite fruits are in season and my smoothies are the most delicious :)

Fruity Snacks-

Such an incredible snack today!!


I was so excited when I went to whole foods today. The moment I saw fresh peaches, my mouth began to water because I could just TASTE them in my mouth.

Fresh ripened fruit is one of my very favorite parts of summer.

I eat it ALL day long.

Ever since I’ve began eating really healthy again, fresh fruit sounds better than most sugary desserts. I’d pick a bowl of fresh juicy sweet mouthwatering watermelon over a dish of ice cream ANY DAY!

Yum :) Fruit makes a delicious in between meal snack. Also, when I’m eating my meals I almost always have a bit of fruit on the side as well.

Try it out, get as much of an excellent fruit variety as you can :)

Adding fruits and protein to make your salad even more healthy! I make my dad and I lunch everyday, and among other things I always do my best to fit a salad into every lunch! When making a salad, I love incorporating fresh fruit and veggies to get the most nutrition out of the salad as possible. Today’s salad: -blueberries -dark leafy green lettus -spring red lettus -fresh spinach leaves -almonds -mandarin oranges -balsamic vinaigrette dressing Raw Blue berries- give the salad a wonderful source of antioxidants, high in vitamins A & K, also have a bit of protein Mandarin Oranges- (native to China) low in calories but high in anti-oxidants as well. Very rich source of vitamin C (which is known for wound healing, cold/ feaver reducer, and helps your body absorb iron). AVOCADOS
Since I’ve been a vegetarian my WHOLE life, I’ve always had to find clever creative ways to put protein into my diet to make up for the lack of protein I don’t get from meat. Avocado’s are definitely one of my favorite ways to add protein to my meals because of the amount of protein that each one has!
Here are some things I bet you didn’t know about Avocados :)
Avocados are bursting with nutrients—vitamins, A, B-complex, C, E, H, K, and folic acid, plus the minerals magnesium, copper, iron, calcium, potassium and many other trace elements.
Avocados contain more protein than cow’s milk, about 2% per edible portion.
A small avocado will provide more usable protein then a huge steak because cooked protein in meat is deranged and mostly unavailable to our liver, the organ which makes all of our body’s protein.
The water content of avocado by weight averages 74%. Because avocado is a ripe, watery, enzymatically-alive fruit, it ranks as the most easily digested rich source of fats and proteins in whole food form.
Some avocado myths & facts
1. It’s a vegetable.
Fact: It’s actually an oily berry—a fruit.
2. It’s high in cholesterol.
Fact: It has no cholesterol. Only animal foods have cholesterol.
3. It’s high in fat.
Fact: By weight, avocados average 30% easily digestible oily fatty acids and approximately 70% water.
4. Its saturated fat content is dangerous.
Fact: Only about 2.5% of the edible portion of avocado is saturated fat, and unheated saturated fat from live plant foods is non-toxic.
5. It’s fattening.
Fact: It is the cooked starches, meat, dairy and processed sugar in people’s diets that feed their fat cells. Most active people who consume avocados as part high raw food vegan diet have no problem losing excess fat and staying lean.
6. It is a tree ripened fruit.
Fact: The avocado doesn’t soften on the tree. After dropping or picking it must be allowed to soften for 4 to 17 days depending on the variety and ambient temperature and humidity.
7. It is best to ripen it in a bag.
Fact: Not necessary. Keep your weekly supply of avocados on your kitchen table, counter or somewhere else in plain sight. Pinch the tops and bottoms each morning and when they yield to pressure on both ends they are ripe. Refrigerate the ones you are not ready to eat.
9. It can’t be refrigerated.
Fact: Yes it can. Wrap ripe avocado in plastic or keep it in a plastic bag or container. If it is refrigerated for too long some spoiling may result. Remove unripened avocado from the refrigerator 2 or 3 days before you intend to eat them.
10. Keep the seed in to keep the guacamole from turning black.

Kale is RICH in Fiber & fiber is so important for our bodies. Especially our stomach! In the stomach, fiber is bulky, so it tends to make us feel full. However, insoluble fiber moves out of the stomach fast unless there is fat, protein, or soluble fiber to slow it down. 

If you can increase the amount of Vitamin A and not have to eat 103 bananas to get it, and increase the amount of Vitamin K without having to eat 384 carrots I’d say that’s something worth discovering and learning about.

The-Fitspirational-Blonde’s FRUIT FACTS OF THE DAY!

Today: STRAWBERRIES

Q:  Why were the little strawberries upset?
A:  Because their parents were in a jam!

^That little joke was just too cute not to share!^ I was volunteering at Children’s Hospital as Cinderella last weekend, and one of the little boys with Leukemia told me that joke. So, of course I heard the word “Strawberry” and then just had to write it on my health blog.

*Shout out to Jimmy for letting me share your joke!*

He told me he reads my “Fitspirational-Health-Blog” everyday… but considering he’s 4 (probably doesn’t even know what the internet is) and is stuck in a hospital all day… I had my doubts. Jimmy is such a cute kid though, he’s one of my favorites when I volunteer at Children’s Hosp.

Anyway, let’s talk about Strawberries!

We all know they taste delicious, but why are they SO great for our bodies?

  • Diet- One cup of strawberries contains over 13% of the RDA of dietary fiber, yet only 43 calories
  • Antioxidants- Strawberries are RICH in antioxidants 
  • Anti-Cancer The combination of antioxidant and anti-inflammatory agents found in strawberries is well-known to fight against the onset of many different forms of cancer. 
  • The Vigorous Vitamin C
    One cup of strawberries contains an incredible 136% of the RDA of vitamin C, an effective antioxidant that can help lower blood pressure, ensure a healthy immune system, and ward off the development of age-related ocular diseases, such as cataracts and macular degeneration.
  • Bone Health
    Strawberries are also great for the bones, helping in bone building and maintaining proper bone structure. The potassium, vitamin K, and magnesium in strawberries are also important for bone health!
So make them into jam, put them in your smoothies (like I do every morning,) sprinkle them over your salad, and toss them over your cereal because your body needs and LOVES THEM!!!

A not so sweet surprise….

Having trouble stopping the nasty habit of sugar and caffeine addiction?

Get educated. That’s what I’M HERE FOR!!



I used to be SO addicted to soda and sugary beverages.
I used to drink sodas almost every day because I didn’t know the exact extent that it harms our body.

Getting unaddicted to sugar is one of the hardest things you will ever challenge your body to do. Some of you may not even know that you are addicted to it.

My Advice: Take baby steps-

  1. Start cutting down your soda and sugary juices to every other day
  2. Then every two days
  3. Only after your body can handle every two days, go for the weekends only
  4. Once you’ve been able to go an entire 6 days Soda free- go for only Sundays. By this time, your body is no longer looking at soda as something it NEEDS, rather something it gets to enjoy occasionally.
Something else that REALLY helped me when I was spending time trying to get rid of soda, was EVERY TIME I began to crave caffeine and sugar, (before I let myself drink a can of it) I would first drink an ENTIRE 8oz of water. Then I would wait 5 mins, and only then would I consume the soda.
After doing this for a couple weeks, I found that my body didn’t really want the soda it was just dehydrated. 

This picture of sugar content is DISGUSTING. Finally after working hard for MONTHS I can hardly believe that I used to consume that much sugar (in the above picture of Mountain Dew) so often. It makes me gag just thinking about consuming that entire baggy of sugar.

It is going to be HARD work, trust me I know. 

BUT I DID IT, and SO CAN YOU!

Print this out, put it on EVERY DRINK in your fridge that is not water.

I dare you.
